Star-rated chef Ronny Siewert's culinary roots lie in classic French cuisine, which is characterised by a straightforward, no-frills approach.

It is down-to-earth and yet full of intensive flavours and aromas. The perfection required to tease every last bit of flavour out of any product is what appeals to Ronny Siewert most about his work. Modern presentation of his dishes and creativity are equally important to him.

His personal preference is the interplay of sweet and savoury in combination with fish and shellfish. Ronny Siewert draws culinary inspiration from the seasons  and likes to combine premium and regional produce in his menus.

In order to make the interaction of individual dishes, aromas and wines the perfect match, Ronny Siewert is not averse to bucking the traditional sequence of courses. Together with the sommelier they alter menu sequences to achieve an intensification of flavours in combination with the right wine.

His personal taste sensations include his grandma's homemade noodle soup and his mother's escalope with asparagus.
